Contour means the pillow is not flat: it has a high edge and a low edge.
The idea is that you choose. Use the high edge when you sleep on your side, to fill the gap between your shoulder and head, and the low edge when you sleep on your back. That way you do not have to keep folding the pillow or putting your hand under it.
